Asparagus Salad

A light flavoursome spring salad…

Raw asparagus makes a perfect spring salad, this recipe is lightly spiced with a hint of lime.

Ingredients

  • 200g Asparagus

  • 4 tbsp Olive Oil

  • Juice and zest of 1 Lime

  • 1 Red Chilli

  • 1 Lemon Grass Bulb 

  • 2 tsp White Wine Vinegar

  • 1/2 tsp Nigella Seeds

  • 2 tbsp Maple Syrup

  • 2 tbsp Gluten Free Soya Sauce

  • Sea Salt (to taste)

  • Lime Wedges and Coriander Leaves for garnish

Directions

  • Shave the asparagus with a potato peeler and rinse in cold water.
  • Blitz the rest of the ingredients in a food processor and dress the asparagus.
  • Serve with a lime wedge and coriander leaves.
