Runner Beans with Onion and Mustard Dressing

A healthy summer side dish, perfect with hot or cold meals...

This light and easy to prep side dish is full flavour and is a healthy side dish that combines well with all sorts of mains.

  • 400g Runner Beans

  • Dressing
  • 2 tbsp Whole Grain Mustard

  • 2 tbsp Olive Oil

  • 1 tbsp Maple Syrup

  • 1 tbsp chopped Parsley

  • 1 tbsp finely chopped Red Onion

  • 1 tbsp Balsamic Vinegar

  • Juice of 1/2 Orange


  • Wash and trim the beans.
  • In a small bowl whisk the dressing ingredients and set aside.
  • Cook the beans in salted boiling water for 3-4 minutes, drain and mix with the dressing.
  • Serve warm.
