Raw asparagus makes a perfect spring salad, this recipe is lightly spiced with a hint of lime.

Ingredients
200g Asparagus
4 tbsp Olive Oil
Juice and zest of 1 Lime
1 Red Chilli
1 Lemon Grass Bulb
2 tsp White Wine Vinegar
1/2 tsp Nigella Seeds
2 tbsp Maple Syrup
2 tbsp Gluten Free Soya Sauce
Sea Salt (to taste)
Lime Wedges and Coriander Leaves for garnish
Directions
- Shave the asparagus with a potato peeler and rinse in cold water.
- Blitz the rest of the ingredients in a food processor and dress the asparagus.
- Serve with a lime wedge and coriander leaves.
