Guacamole with an exotic twist…
A favourite recipe made more exotic with the addition of sweet mango which wonderfully complements the creaminess of the avocado.

Ingredients
2 Avocados
1 Ripe Mango
1 handful of Fresh Coriander
1 tbsp Chopped Red Onion
1 Red Chilli (deseeded and finely chopped)
Juice of 2 Limes
4 tbsp Olive Oil
Salt and Pepper (to taste)
Directions
- Peel the avocado, remove the stone and scoop the pulp out onto a chopping board using a spoon. Cut into small cubes.
- Do the same with the mango and mix with the avocado.
- Add the onion, coriander roughly chopped, lime juice, oil chilli and seasoning.
