Ingredients
- Filling
1 tsp Margarine
1 tbsp Plain Flour
250ml Soya Milk
1 tsp Nutmeg
150g Oyster Mushroom
1 Garlic Clove, finely chopped
2 tbsp Olive Oil (for the mushrooms)
A splash of White Wine
2 tbsp Chopped Parsley
Salt and Pepper
- Topping
2 tbsp Breadcrumbs
2 tbsp Olive Oil
Directions
- Heat a pan over low heat and add the margarine and the flour, stir for 30 seconds. Add the milk and the nutmeg and bring to boil. Remove from heat and set aside.
- In a frying pan, heat the mushrooms for a couple of minutes. Add the garlic and the olive oil and continue stirring until the mushrooms are golden. Add the white wine, reduce and remove from heat.
- When cold, chop the mushrooms into small pieces and mix with the white sauce. Adjust salt and pepper and add the parsley.
- Peel the avocado, cut in half and destone.
- Line a baking tray and fill the avocado with the mushroom filling. Sprinkle with breadcrumbs and bake at 200°C for 5 minutes or until the breadcrumbs are golden.
