Celebrate the Chinese New Year with this tangy, mouth watering side dish. A sour tofu that is seasoned and flavoured with soy sauce, maple syrup, garlic cloves and coriander, this promises to be an addictive treat.

Ingredients
500g Firm Tofu
4 tbsp Corn Flour or Tapioca Flour
6 tbsp Soya Sauce
4 tbsp Water
4 tbsp Maple Syrup or Agave
2 finely chopped Garlic Cloves
1 tbsp Ketchup
4 tbsp Vegetable Oil
4 tbsp Fresh Coriander Leaves
1 tbsp Rice Vinegar
Directions
- Drain the tofu from packaging liquid and dry with a paper towel. Cut into ½ inch cubes and coat with 2 tbsp corn flour.
- Bring a large cast iron pan to medium heat, add the vegetable oil and brown the tofu on all sides.
- While the tofu is cooking, whisk together the rest of the corn flour, soya sauce, ketchup, vinegar, garlic, maple syrup and water.
- Add the sauce to the tofu and stir for 30 seconds until it thickens. Keep stirring until the tofu is completely coated, add the coriander and keep serve.
