In honour of Chinese New Year, we’ve designed a recipe using Pomelo, a deliciously refreshing citrus fruit native to Southeast Asia. It is often enjoyed during Chinese New Year because the Cantonese word for it is similar to the words for prosperity and status.
Paired with avocado and chives, it makes for a wonderfully light dish that is both savoury and sweet.

Ingredients
- Stuffed Avocado
140g Pomelo Flesh
2 LoveMeTender® Perfectly Ripe Avocados
60g Pomegranate Seeds
35g Plant Based Mayonnaise
1 tsp Fresh Chives
1 pinch of Saffron Strands
- Tuile
40ml Water
25ml Olive Oil
5g Plain Flour
1g Activated Charcoal Powder
- Dressing
60g Pomegranate Seeds
5g Fresh Chives
20ml Olive Oil
Pinch of Salt and Pepper
1 tbsp Apple Cider Vinegar
Method
- Mix the pomelo, pomegranate and mayonnaise together in a small kitchen bowl. Add the saffron diluted in 1 tbsp of water, and the chives finely chopped. Mix and set aside.
- Blitz together the tuile ingredients. Add a quarter of the mixture to a nonstick pan over a medium heat. You do not need to flip the tuile in the pan. When the tuile is dry, remove from the pan and dry in kitchen paper.
- Assemble the dish by filling the avocado with the pomelo salad, adding 2 tsp of the chive dressing, and garnishing with the tuile and a few pomegranate seeds.
