Ingredients

  • Ancient Grains (Barley, Spelt, Freekeh, Millet) 

  • Mixed Greens (kale, spinach, arugula)

  • Roasted Sweet Potatoes

  • Sliced Avocado

  • Cherry Tomatoes, halved

  • Shredded Purple Cabbage

  • Steamed Broccoli florets

  • Chickpeas, roasted with spices

  • Kimchi

  • Mixed Seeds for topping

  • Tahini Dressing
  • 3 tbsp Tahini

  • 2 tbsp Lemon Juice

  • 1 tbsp Maple Syrup

  • 1 clove Garlic, minced

  • 2 tbsp Water (adjust for desired consistency)

  • Salt and Pepper to taste

Method

  • Cook the grains according to package instructions.
  • Arrange a base of mixed greens in a bowl. 
  • Add small portions of each ingredient in a visually appealing manner, creating sections of colours and textures.
  • For the tahini dressing, whisk together tahini, lemon juice, maple syrup, minced garlic, water, salt, and pepper in a bowl until smooth.
  • Drizzle the tahini dressing over the Buddha Bowl.
  • Sprinkle seeds on top for an extra crunch.
