Ingredients

  • 1 cup dried Butter Beans (or canned, drained and rinsed)

  • 1 cup Pearl Barley

  • 1 bunch Kale chopped

  • 1 Onion, diced

  • 2 Carrots, diced

  • 2 Celery stalks, diced

  • 3 cloves Garlic, minced

  • 1 can (14 oz) diced Tomatoes

  • 6 cups Vegetable Broth

  • 1 teaspoon dried Thyme

  • 1 teaspoon dried Rosemary

  • Salt and Pepper to taste

  • Olive Oil for sautéing

Method

  • If using dried butter beans, soak them overnight, then cook until tender. If using canned beans, skip this step.
  • In a large pot, heat olive oil over medium heat. Sauté the onions, carrots, celery, and garlic until softened.
  • Add the diced tomatoes, vegetable broth, thyme, rosemary, and bring the mixture to a boil.
  • Stir in the barley and reduce the heat to a simmer. Cook for about 20 minutes.
  • Add the cooked or canned butter beans and chopped kale to the pot. Simmer for an additional 10-15 minutes until the kale is tender.
  • Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
  • Serve hot with garlic bread and enjoy your hearty butter beans, kale, and barley soup!
