Ingredients
1 cup dried Butter Beans (or canned, drained and rinsed)
1 cup Pearl Barley
1 bunch Kale chopped
1 Onion, diced
2 Carrots, diced
2 Celery stalks, diced
3 cloves Garlic, minced
1 can (14 oz) diced Tomatoes
6 cups Vegetable Broth
1 teaspoon dried Thyme
1 teaspoon dried Rosemary
Salt and Pepper to taste
Olive Oil for sautéing
Method
- If using dried butter beans, soak them overnight, then cook until tender. If using canned beans, skip this step.
- In a large pot, heat olive oil over medium heat. Sauté the onions, carrots, celery, and garlic until softened.
- Add the diced tomatoes, vegetable broth, thyme, rosemary, and bring the mixture to a boil.
- Stir in the barley and reduce the heat to a simmer. Cook for about 20 minutes.
- Add the cooked or canned butter beans and chopped kale to the pot. Simmer for an additional 10-15 minutes until the kale is tender.
- Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
