Grilled Baby Courgette with Olives, Cherry Tomatoes & Basil

A taste of the Mediterranean, this grilled vegetable medley is full of flavour and colour.

  • 400g Baby Courgettes

  • 125g Cherry Tomatoes

  • 2 tbsp Olive Oil

  • 1 tbsp Balsamic Vinegar

  • 12 Pitted Olives

  • 2 Garlic Cloves

  • A handful of Basil Leaves

  • Salt and Pepper to taste


  • Wash, drain and cut the baby courgettes in half.
  • Grill for 3-4 minutes taking care not to overcook in order to preserve colour and crunch.
  • Place the courgettes in a sealed container with the balsamic vinegar, oil, salt and pepper, olives, chopped garlic and basil leaves to marinate at room temperature for 15 minutes.
  • Serve with fresh basil leaves, toasted bread or salad.
