A healthy dish full of colour…
A taste of the Mediterranean, this grilled vegetable medley is full of flavour and colour.
400g Baby Courgettes
125g Cherry Tomatoes
2 tbsp Olive Oil
1 tbsp Balsamic Vinegar
12 Pitted Olives
2 Garlic Cloves
A handful of Basil Leaves
Salt and Pepper to taste
- Wash, drain and cut the baby courgettes in half.
- Grill for 3-4 minutes taking care not to overcook in order to preserve colour and crunch.
- Place the courgettes in a sealed container with the balsamic vinegar, oil, salt and pepper, olives, chopped garlic and basil leaves to marinate at room temperature for 15 minutes.
- Serve with fresh basil leaves, toasted bread or salad.
