Plant Based Pesto Genovese

No Parmesan? No problem...

Pesto hails from Genova in Italy and is made from few and fresh ingredients. This plant based version of the traditional recipe is light, colourful and full of flavour.

Ingredients

  • 4 handfuls Basil Leaves

  • 2 Garlic Cloves

  • 2 tsp Salt

  • 3 tbsp Pine Kernels

  • 6 tbsp Extra Virgin Olive Oil

Directions

  • Wash and dry the basil leaves.
  • Peel and finely slice the garlic.
  • Using a pestle and mortar, grind the garlic with the salt until creamy. Add the basil and keep grinding until smooth.
  • Add the pine kernels and continue grinding until you have pesto. Add the olive oil and adjust the salt to taste.
