Ingredients

  • For the Jackfruit Filling
  • 1 can Jackfruit, drained and shredded

  • 1 Onion, finely chopped

  • 2 cloves Garlic, minced

  • 1/8 cup Soy Sauce

  • 2 tablespoons Hoisin Sauce

  • 1 tablespoon Maple Syrup

  • 1 tablespoon Sesame Oil

  • 1 teaspoon Ginger, grated

  • Carrots, Spring Onion, Red Chilli and Coriander for garnish.

  • For the Bao Buns
  • 180ml Warm Milk 

  • 3.5g Dry Yeast 

  • 3g Baking Powder 

  • 20g Caster Sugar 

  • 1.5g Sea Salt 

  • 300g All Purpose Flour 

Method

  • Jackfruit Filling
  • Sauté onion and garlic in sesame oil until translucent.
  • Add shredded jackfruit and cook for 5 minutes.
  •  Stir in soy sauce, hoisin sauce, maple syrup, and grated ginger.
  • Simmer on low heat for 15-20 minutes, stirring occasionally, until jackfruit is tender.
  • Adjust seasoning and set aside 
  • Bao Bun Dough
  • In a bowl, mix flour, sugar, and baking powder.
  • In a separate bowl, combine yeast with warm milk and let it sit for 5 minutes until frothy.
  • Add the yeast mixture to the dry ingredients and knead until a smooth dough forms.
  • Let the dough rise in a covered bowl for 1-2 hours until doubled in size.
  • Punch down the dough and divide it into small balls.
  • Roll each ball into a flat oval shape, fold in two and oil inside the crease. Place the buns on parchment paper, steam for 12 to 15 minutes. 
  • Fill the buns with jackfruit, shredded carrots and spring onion julienne, red chilli and coriander.
