180g mashed Sweet Potatoes
100g Almond Flour
21g Cacao Powder
100g Coconut Sugar
1 tsp Vanilla Extract
25g Coconut Oil
Pinch of Salt
Cocoa Powder for coating
Method
- In a bowl, combine mashed sweet potatoes, almond flour, coconut sugar, vanilla extract, melted coconut oil and a pinch of salt.
- Mix until well combined and forms a dough-like consistency.
- Shape the mixture into small truffle-sized balls and place them on a lined tray.
- Chill in the fridge for about 30 minutes to firm up.
- Roll the chilled truffles in cocoa powder until evenly coated.
- Refrigerate again for at least an hour before serving.
