Ingredients

  • 180g mashed Sweet Potatoes

  • 100g Almond Flour

  • 21g Cacao Powder

  • 100g Coconut Sugar

  • 1 tsp Vanilla Extract

  • 25g Coconut Oil

  • Pinch of Salt

  • Cocoa Powder for coating

Method

  • In a bowl, combine mashed sweet potatoes, almond flour, coconut sugar, vanilla extract, melted coconut oil and a pinch of salt.
  • Mix until well combined and forms a dough-like consistency.
  • Shape the mixture into small truffle-sized balls and place them on a lined tray. 
  • Chill in the fridge for about 30 minutes to firm up.
  • Roll the chilled truffles in cocoa powder until evenly coated.
  • Refrigerate again for at least an hour before serving.
